It’s impressive that someone invented fajitas from the trash cut of beef. Fajitas seem to be a staple now in just about every Mexican restaurant. They even have chicken fajitas.
we had fajitas for supper. Decent eating. I’m stuffed.

Done right, it's not a bad cut of meat at all.
I prefer a ribeye, but sometimes I'll go to the mexican joint and get a skirt steak because I want salsa and all the other side items.
Comes with guacamole and tortillas so I generally end up cutting a few pieces off and making a fajita more or less.

My wife will take any kind of steak and cut it into small strips and cook it sliced onions and peppers, makes a pretty good meal it’s what we’re having tonight. At the restaurants here you can get them with steak, chicken and shrimp.
