Are bison as good as elk to eat? And can a non resident kill one?

This was at a neighbours place that borders us. We shot these critters because they were trespassing. They were escapees from a buffalo outfit somewhere. If memory serves there was 13 in the group. A year of two later we had a repeat performance with about 11 head that had escaped from a different outfit and had traveled about 25 miles to get here. If they would have made their way to the government land in behind us they would still be there reproducing and ruining fences and grazing. These particular buffalo tasted great, very beef like as they had spent the summer in a pea crop before making it to this point. But get an old bull in the high mountains in December and you might wish you hadn't. Hunting of bison is only by limited entry draw.

Looks like a extra heavy duty bumper is needed in that part of the country.
