I like white boy food but I'll take good mexican food every chance I get. When you walk into a real mexican home you know two things right off the bat. You and your kids will be treated like family and you're going to eat good. Truth ! My grandad was a big cotton farmer. He hired āwetsā back in the day. He furnished them housing and we hoed the cotton fields right along with them. Tjier kids were out friends and we grew up together, they are legal now and good people. Weād packed sandwiches but theyād share their homemade tortillas with hamburger, potato, beans, onion and chiliās . It was the best food you ever had. Some of the very finest men I know don't speak a word of english. I met most of them working on dairies. I've been to their homes and had them at mine. One time I mentioned that my now ex was having surgery and word got around and the kids and I ate like kings for about two weeks until I put the word out that she was better. My son and I were just talking about that today.

I tried something new and made beef and cheese enchiladas with rice and home made refried beans for the kids yesterday. About halfway through I started having my doubts but they ate until the couldn't stand to take another bite. About half was left so I covered it for todays lunch. Went to dish it up for lunch and it was gone! Both kids got up in the night and had another plate. I guess that's a score.
I was digging through cabinets yesterday looking for a pan and found a bread machine that is probably fifteen years old and has been used maybe twice. I happened to have everything needed for raisin bread so we'll see how that goes. My boy eats a loaf of sourdough bread every few days so that's tomorrows culinary adventure.

Iād have to skip the beans unless Iām alone. If Iām not alone I will be before long if I eat beans š Enchilada sauce ? I really like the green chili sauce

I used a dry packet that you mix with tomato sauce. It didn't look like enough but it came out just about right. The recipe called for eight and I made six and overstuffed them and added way more cheese and jalepeno. I couldn't find a premixed sauce so I started grabbing stuff to make my own and then found the dry mix. By that time I was ready to just get the hell out of the store so I have some extra groceries to use up somewhere along the way.

With a recipe titled "something just isn't right" I'd be afraid to try it.

Substitute salmon for tuna. Then youāll be set! Iāll try it Skin on salmon just aināt right. Fillet it off the skin, it only takes 2 seconds !!! Last time I bought skin on salmon filets I had to deal with so many scales I vowed to never buy it that way again. Personally donāt like it anyway but wife got on a smoked salmon kick. Wife and sons liked what I produced. I donāt know if it was any good or not... never had any that Iād say āWOW! That good. I want more!ā Got meatloaf in in the oven now waiting for the kids to show up.

Substitute salmon for tuna. Then youāll be set! Iāll try it Skin on salmon just aināt right. Fillet it off the skin, it only takes 2 seconds !!! I was kinda just picking at you. I donāt care for tuna but I love salmon. Your recipe is almost the same as the way I make salmon patties. For a person that likes tuna, I donāt know why it wouldnāt be just as good. Maybe it has something to do with āfryingā tuna. But I donāt see why that would hurt the taste. Who knows? Let us know what you figure out.

Substitute salmon for tuna. Then youāll be set! Iāll try it Skin on salmon just aināt right. Fillet it off the skin, it only takes 2 seconds !!! There is nothing that salmon will make better. I have eaten tons of salmon. Fresh salmon. Some of it nearly still flopping when it hit the skillet. The only salmon fit to eat is either sockeye, silvers, or kings that is fresh out of the saltwater, bled, and immediately iced and even those are questionable. Pinks or chums are literally dog food.

We were too pore to afford fried salmon patties when I was young and still at home. Had quite a few made with canned mackerel tho, which wasn't terrible.
My cardio girl told me fish like catfish and tilapia wouldn't help my heart none one bit, but cold water fish like salmon and swordfish would work. (I don't like tilapia anyway)
I don't know how we survived as kids. Lunches most of the time consisted of tuna fish sandwiches made with mayonnaise, stuck in a paper bag and then stored in a locker in a hot hallway from early morning till lunchtime. Schools and kids both today would scream "abuse"....
