Picked up some stuff for jerk chicken or jerk pork went to the hip strip in Montego bay, they did say that you should marinate it for two days, weather its pork or chicken, and you can freeze it afterwards.

What a great way to hide that chicken flavor! Don't forget to post some exotic vacation pictures.

Lol, I know what you're saying, our families love for beef will never change, but what you said is really true, we dont need to spend any money on any of our beef to make it taste better, if you do, your not raising it right. ๐

I don't know about marinating for 24 hrs if the marinade has much pineapple in it. Lots of acid and enzymes in pineapple that would turn a steak to mush in way less than 12 hrs. A whole pineapple tho, including skin and inside, run thru a food processor will do wonders on a select steak or other cheap cut if it is completely immersed in the crushed pineapple for one hour in the fridge. Take it out after one hour, wash the pineapple off the meat, season as you desire and grill it as usual and it will be tender as heck with just a bare hint of pineapple flavor. I did an eye of round one time and was amazed how tender it was and eye of round has almost no fat or marbling to it. If you leave beef in the pineapple too long, it will ruin it. 30 min would probably work....1 hr tops. I do like to do the Caribbean jerk thing with pork ribs tho.

Not to many recipes over here have pineapple in it,so I don't think it would be a problem.

Kick in a little Sherry wine with that and give it a whirl. We used to get a thick cut, about 2 inches thick, from the local butcher before they shut down. So we marinated it longer. But using pineapple and sherry was always a crowd pleaser. About 4:1 ratio.

Looks awesome! Like a mini vacation grilling in your back yard, without all of the air travel crap.

I agree Angus Rancher, I'm getting to the point in my life that I have more fun in our country taking vacations, me and the wife enjoy going 5 hours away in north west Wisconsin and spend a week fishing and enjoying the scenery and people, must be getting old, not knocking the places we have been, but I'm more comfortable being in the states.

Wisconsin even sounds nice. It's getting damned hard to get away at all anymore, and we used to go quite a bit. My wife has gone with different groups all over the world to places that you couldn't pay me to go. It always just makes me appreciate what we have here in the states even more.
