They decided to have a United Way fund raiser brisket competition here at work.
Folks it is on !! The only bad part is I am entering a store bought brisket. I smoked three. Hopefully I picked the best of the bunch. It was steeped in the smoker with onion, garlic and chopped peppers. It smells awesome.
There is a set judging that is typical for this type of competition. But they are also having a "people's choice" competition. Two chances to win.
No participation trophy. Winner takes all.
I was making barbecue sauce last night and spilt salt over my measuring spoon. Over salted the sauce. So I went back to town for more Worcestershire sauce and tomato paste. I doubled up the batch and canned the extra in fruit jars. The final brew seems about perfect.
Now they are matching me against some near professionals. Three of these people go to competitions regularly. This one is my first.

Never cared for it. Too dry and too done. Beef is meant to be ate bloody

Well I didn't win. But damn it was fun. They went thru 12 briskets, at $10 a plate. Big fund raiser. Great conversations.

Y'all don't have hogs out there. Everyone knows that's the only thing to BBQ. We've done several hogs. Heck I trapped 43 one week back in 2014 or so. But this was a brisket competition. We take brisket pretty serious around here.

Just never see brisket in the stores up here. Apparently the limit supply all gets shipped to the south where it is popular.

I read an article a few weeks back that brisket prices have risen because of the gain in popularity especially through the center part of the county. Probably a lot has to do with the grilling craze. They have become a lot easier to cook with the popularity of pellet grills and smokers.

I used to buy untrimmed brisket for $.99/lb all the time. At one time, they were a little hard to find because most were ground into burger. Days gone forever on both accounts.

Found one of these at HEB today. Nice looking hunk of meat. Might try on one of these days. HEB lets me get prime without going to the butcher shop. Really glad they moved in here.

$6.00 a pound pricy....yeah, but it was trimmed so that helps. Whole Packer briskets run about $2.70 to $3.00 if not on sale. Weigh about 16 lbs and have 5 or so lbs of fatty brisket plus 2 - 3 lbs of pure fat cap. Probably less than a half pound of fat cap was on the Wagyu brisket. It was all “lean” meat so maybe $1 - $1.50 a lb premium over your regularly priced trimmed brisket. Low and slow slow would take a while on it too, thin end being about 4 inches thick....
